garlic in oil until soft - about 10 minutes.  Add beans, broth, water, bay leaves, parsley, turkey, potatoes and thyme.  Bring to a boil, reduce heat and skim off foam.  Simmer partially covered for 2 hours, stirring occasionally.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2.  Remove turkey and bay leaves.  Cut turkey off bone.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;3.  Set aside about 3 C of soup and beans.  In a food processor, puree until smooth.  Return mixture to soup along with turkey pieces.  Season with salt and pepper.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;May be refrigerated two days or frozen.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Serves 6 to 8.&lt;/div&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/1177171408026146019-7782525623665035995?l=myeverythingfood.blogspot.com' alt='' /&gt;&lt;/div&gt;</content><link rel='replies' type='application/atom+xml' href='http://myeverythingfood.blogspot.com/feeds/7782525623665035995/comments/default' title='Post Comments'/><link rel='replies' type='text/html' href='http://www.blogger.com/comment.g?blogID=1177171408026146019&amp;postID=7782525623665035995' title='0 Comments'/><link rel='edit' type='application/atom+xml' href='http://www.blogger.com/feeds/1177171408026146019/posts/default/7782525623665035995'/><link rel='self' type='application/atom+xml' href='http://www.blogger.com/feeds/1177171408026146019/posts/default/7782525623665035995'/><link rel='alternate' type='text/html' href='http://myeverythingfood.blogspot.com/2008/11/navy-bean-soup.html' title='Navy Bean Soup'/><author><name>Michele</name><uri>http://www.blogger.com/profile/13423707762966386583</uri><email>noreply@blogger.com</email><gd:image rel='http://schemas.google.com/g/2005#thumbnail' width='16' height='16' src='http://img2.blogblog.com/img/b16-rounded.gif'/></author><thr:total>0</thr:total></entry><entry><id>tag:blogger.com,1999:blog-1177171408026146019.post-4630947245849787754</id><published>2008-10-08T19:53:00.000-07:00</published><updated>2008-10-08T20:10:51.629-07:00</updated><category scheme='http://www.blogger.com/atom/ns#' term='minestrone'/><category scheme='http://www.blogger.com/atom/ns#' term='soup'/><title type='text'>Delicious Minestrone - Move Over Olive Garden</title><content type='html'>&lt;div&gt;This is a very tasty soup!  And it is chock full of vegetables, so it is very healthy.  (Sorry, I don't have a picture today.)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;Makes about 10 cups&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="font-family:'trebuchet ms';"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 51, 51);"&gt;ingredients&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1/2 lb dried white beans, rinsed and soaked overnight - or - 2 14.5 oz cans canellini beans, drained and rinsed and 1 14.5 oz can chick peas&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1/4 lb pancetta (I found this at Trader Joes) - or - use sliced, lean bacon, chopped&lt;/div&gt;&lt;div&gt;1/3 C olive oil&lt;/div&gt;&lt;div&gt;1 onion, chopped&lt;/div&gt;&lt;div&gt;1 large carrot, sliced&lt;/div&gt;&lt;div&gt;2 ribs of celery, sliced&lt;/div&gt;&lt;div&gt;3 cloves garlic&lt;/div&gt;&lt;div&gt;2 zucchini, diced&lt;/div&gt;&lt;div&gt;1/4 lb green beans, cut into 1/2 inch pieces&lt;/div&gt;&lt;div&gt;1/2 lb potatoes, diced&lt;/div&gt;&lt;div&gt;4 C shredded cabbage&lt;/div&gt;&lt;div&gt;1/2 lb kale, chopped - or - spinach, chopped&lt;/div&gt;&lt;div&gt;28 oz can diced tomatoes&lt;/div&gt;&lt;div&gt;4 1/2 C chicken broth&lt;/div&gt;&lt;div&gt;1/2 lb macaroni noodles&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;freshly grated Parmesan, bruschetta, and sausage to accompany&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="font-family:'trebuchet ms';"&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 51, 51);"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;preparation&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;If using dried beans.  After soaking overnight, drain beans.  Place in saucepan and cover with water and simmer, uncovered for 45 minutes to 1 hour, or until they are tender.  Add the salt.  Remove from heat and let the white beans stand uncovered.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;In a heavy dutch oven or large pot, cook the pancetta in oil until crisp and pale golden, add the onion.  Cook, stirring, until the onion is softened.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Add the carrots, celery and garlic.  Cook for 4 minutes. It's great fun to mix up a batch and then let the kids mix in the colors.  I give them a scoop of dough, they add a few drops of food coloring (first they make an indentation with their finger to put the drops in).  Lastly, the go to town kneading it until the color has been incorporated.  It's also a great way to talk about how to mix primary colors to make secondary colors.&lt;br /&gt;&lt;br /&gt;The recipe is very simple:&lt;br /&gt;&lt;br /&gt;2 C boiling water&lt;br /&gt;1 C salt&lt;br /&gt;2 C flour&lt;br /&gt;2 tsp cream of tartar&lt;br /&gt;food coloring of choice&lt;br /&gt;&lt;br /&gt;Dissolve the salt in the boiling water.  Then mix in the flour and cream of tartar.  Allow the mixture to cool. Then I piled raspberry jam on one half and placed the other half on top.  I wanted the frosting to match the filling so I added a couple of drops of red food coloring to a buttercream frosting to get pink.  Just for fun I used a pastry bag and piped little flowers around the bottom and on the top.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I have to bring dessert to a Enrichment Night on Tuesday.  I am planning on making this again and using 9 in rounds instead.  I want to do a ribbon piping around the sides next time.  I'll post a picture after I've made it.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Recipe:&lt;/div&gt;&lt;div&gt;1 yellow cake mix&lt;/div&gt;&lt;div&gt;1 vanilla pudding mix&lt;/div&gt;&lt;div&gt;1 C water&lt;/div&gt;&lt;div&gt;2/3 C oil&lt;/div&gt;&lt;div&gt;3 eggs&lt;/div&gt;&lt;div&gt;1/2 C sour cream&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Preheat oven to 350.&lt;/div&gt;&lt;div&gt;Grease and flour desired pans.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Slowly beat all ingredients together until smooth and incorporated, about 1-2 minutes. Scrape sides of the bowl occasionally.  Increase mixer speed and beat additional 5 minutes. Pour batter into prepared pans and bake 30 minutes or until cake tester inserted in middle of cake is comes out clean.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Cool cakes in pan on wire rack 10 minutes. I used a recipe I found online but modified it to lower the fat content.  This basic recipe can easily be modified to fit your tastes.&lt;br /&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;Serves 8&lt;br /&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 C carrot, diced&lt;br /&gt;1 C celery, diced&lt;br /&gt;1 C onion, diced&lt;br /&gt;1 garlic clove, diced&lt;br /&gt;salt and pepper to taste&lt;br /&gt;2 T olive oil or safflower oil, divided&lt;br /&gt;2 boneless chicken breasts&lt;br /&gt;32 oz chicken broth, low sodium&lt;br /&gt;juice of 1 lime&lt;br /&gt;1 15 ounce can,  Mexican style stewed tomatoes&lt;br /&gt;1/2  packet taco seasoning (I used McCormicks)&lt;br /&gt;10 corn tortillas cut into small pieces&lt;br /&gt;1/2 C milk&lt;br /&gt;&lt;br /&gt;Toppings:&lt;br /&gt;shredded cheese&lt;br /&gt;cilantro&lt;br /&gt;avacado&lt;br /&gt;corn chips or tortillas&lt;br /&gt;&lt;br /&gt;1.  Heat 1 T of oil and brown chicken.  Remove from pan. Dice into bite size pieces.&lt;br /&gt;&lt;br /&gt;2.  Keep the drippings, add 1 T oil and saute carrots, onions, celery, garlic and salt and pepper until tender.&lt;br /&gt;&lt;br /&gt;3.  Return chicken to pan and add taco seasonings.  Stir until all ingredients are coated with spices.&lt;br /&gt;&lt;br /&gt;4.  Add chicken broth, tomatoes and lime juice.  Add the tortillas pieces and let boil 20 minutes until they are thoroughly incorporated into soup.  Stirring occasionally to prevent sticking.&lt;br /&gt;&lt;br /&gt;5. Add milk and simmer an additional 10 minutes.&lt;br /&gt;&lt;br /&gt;6.  Serve the soup with a sprinkling of cheese and other toppings of your choice. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Chicken &amp;amp; Rice with Spicy Italian Sausage&lt;/span&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Ingredients:&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1 lb meaty chicken (thighs, legs) on bone&lt;/div&gt;&lt;div&gt;1 lb hot italian sausage&lt;/div&gt;&lt;div&gt;1 lg green pepper&lt;/div&gt;&lt;div&gt;1 C chopped onion&lt;/div&gt;&lt;div&gt;3 garlic cloves, minced&lt;/div&gt;&lt;div&gt;1 C long-grain rice (I use brown rice - NOT INSTANT)&lt;/div&gt;&lt;div&gt;3 C warm chicken stock&lt;/div&gt;&lt;div&gt;1/4 t saffron&lt;/div&gt;&lt;div&gt;bay leaf&lt;/div&gt;&lt;div&gt;oregano&lt;/div&gt;&lt;div&gt;salt and pepper to taste&lt;/div&gt;&lt;div&gt;olive oil&lt;/div&gt;&lt;div&gt;14 oz can diced tomatoes (you may use fresh)&lt;/div&gt;&lt;div&gt;1/2 bag frozen peas&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;As claimed by the company:  &lt;span class="Apple-style-span" style="font-style: italic;"&gt;This tender, high-rising bread makes wonderful sandwiches and great toast.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-style: italic;"&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="color: rgb(102, 51, 0);"&gt;Oatmeal Bread&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;3 C King Arthur Unbleached Bread Flour&lt;/div&gt;&lt;div&gt;1 C rolled oats &lt;/div&gt;&lt;div&gt;2 T butter&lt;/div&gt;&lt;div&gt;1 1/2 t salt&lt;/div&gt;&lt;div&gt;3 T brown sugar or honey (I used honey)&lt;/div&gt;&lt;div&gt;2 t instant yeast OR 1 packet active dry yeast&lt;/div&gt;&lt;div&gt;1 1/4 C lukewarm milk&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;1.  In a saucepan, heat the milk with the butter just until the butter begins to melt.  Dissolve the yeast in the warm milk and let sit 5 minutes until frothy.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;2.  In a large mixing bowl, combine all of the ingredients, mixing to form a shaggy dough.  Knead by hand or machine till it's smooth.  Add flour as needed.  Place dough in a lightly greased bowl, cover and allow to rest for 1 hour.  It'll become quite puffy, though it may not double.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;3.  Transfer the dough to a lightly oiled surface, and shape it into a log.  Place in a lightly greased 9x5 - inch loaf pan.  Cover the pan and allow the dough to rise for 1 to 1 1/2 hours, till it's crested 1 to 2 inches over the rim of the pan.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;4. In the meantime, begin cooking the pasta.&lt;/div&gt;&lt;div&gt;2. Add chopped tomato and zucchini to the oil.  Pour in the clam liquid.  Mix well and cook over low to moderate heat until the sauce begins to dry out and thicken slightly.  Add salt and pepper to taste.&lt;/div&gt;&lt;div&gt;3. (The longer you simmer, the better it tastes.) These were more expensive than I usually like to pay for apples, but I wanted to try our local fare.  I kept passing on the strawberries too until one stand owner started advertising 3 packs for $5!  That was a steal and took the last of my moola.    I came away with a lot of fresh, beautiful food and didn't spend a fortune.    &lt;div&gt;&lt;br /&gt;&lt;div&gt;We are also fortunate to have friends with citrus trees and are &lt;span class="Apple-style-span" style="font-style: italic;"&gt;phat&lt;/span&gt; by Barbara Kingsolver.  A great read, and highly recommended!  (For a funny commentary, click &lt;a href="http://missnemesis.blogspot.com/2007/09/have-found-new-meaning-in-life.html"&gt;here&lt;/a&gt;.)  The book asks you to think about eating food in season rather than paying the price of the oil to ship food from all over the globe to satisfy our whim to eat raspberries in January.  &lt;img style="margin: 0pt 10px 10px 0pt; &lt;/div&gt;&lt;div&gt;I decided I needed to do my part and dutifully headed over to the Saturday Farmer's Market.  I had the specific goal of discovering which foods are being grown in SoCal in March.  Lucky me!  A surprising large amount of produce can be grown here year round.  &lt;br /&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;Walking through the market I stopped at a stand that I normally pass by without a second glance. I was attracted the the table piled high with wild mushrooms and I knew right away that I wanted to use some in a risotto.  They were so pretty that I bought more than I needed.  I'll use the extras to make omelets.  &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Here is the recipe.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0); font-style: italic;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="font-size:large;"&gt;&lt;span class="Apple-style-span" style="font-style: italic;"&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);"&gt;Wild Mushroom and Asparagus Risotto&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0); font-style: italic;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1 1/2 C chopped mushrooms&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1/4 chopped parsley&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1/3 C butter, divided&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1 1/2 C arborio rice&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1 onion, finely chopped&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;asparagus to taste - blanched and cut into 1 inch slices&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1/2 C dry white wine&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;1/2 C grated romano cheese&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;salt and pepper to taste&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 0, 0);  font-style: italic;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;4-5 C chicken stock (preferably homemade) Heat broth in a large pot and keep hot.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="color: rgb(51, 0, 0);  font-style: italic;font-size:18px;"&gt; &lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span"  style="font-size:medium;"&gt;Finely chop the mushrooms and some fresh parsley.  Saute in 1 Tbsp of butter and 1 tsp of lemon juice until mushrooms brown and begin to give up their juice. Set aside.&lt;/span&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Melt 1 Tbsp butter.  Saute onion until translucent.  Add rice and asparagus, stirring to coat.  Pour in 1/2 C dry white wine and cook until wine is absorbed or evaporated.  Add 1/2 C chicken broth.  Cook until broth is absorbed.  Continue to add broth 1/2 C at a time, cooking the rice slowly.  After 10 minutes, add the mushrooms.  Continue to add broth and cook rice until al dente. I made delicious grilled cheese sandwiches tonight to compliment the leftover veggie soup.  &lt;br /&gt;&lt;br /&gt;I fried up the leftover bacon from last nights dinner and poured off the grease.  Then I slapped down a piece of bread in the hot pan, topped it with cheddar, a slice of bacon, avacado and spinach leaves.  Top it off with another piece of bread, and flattened it with the spatula.  I flipped it and cooked the other side, sliced and served.  Even Elias liked it (yes, he picked it apart, but he ate all the pieces. I wasn't even sure what it was exactly, but it sounded good so I thought, why not.  I looked online at several recipes and then used my big Italian Cooking Encyclopedia  as a basic guide.  I went ahead and made it the old-fashioned way - bacon grease and everything.  Next time I'll make a few changes.&lt;br /&gt;&lt;br /&gt;The dish in english is called &lt;span style="font-style:italic;"&gt;Spaghetti with Eggs and Bacon&lt;/span&gt;.  Here is how I prepared it.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Ingredients&lt;/span&gt;:&lt;br /&gt;6 strips of bacon&lt;br /&gt;2 cloves of garlic&lt;br /&gt;2 leeks, thinly sliced (white parts only)&lt;br /&gt;1/4 C white wine&lt;br /&gt;3 eggs, at room temperature&lt;br /&gt;3/4 C freshly grated Parmesan cheese&lt;br /&gt;salt and pepper to taste (I skipped the salt, considering I was already using bacon)&lt;br /&gt;1 lb spaghetti&lt;br /&gt;&lt;br /&gt;1. Bring a large pot of water to boil.  In a frying pan, cook bacon and set aside when crispy.  Chop into small pieces. Drain off all but 1 T of bacon fat.  &lt;br /&gt;&lt;br /&gt;2.  Add spaghetti to boiling water and cook to al dente.  (You want everything to be hot at the same time) In a large serving bowl beat together the eggs and Parmesan cheese with a fork.  Season with salt and pepper.&lt;br /&gt;&lt;br /&gt;3.  While the pasta is cooking, saute garlic and leeks in bacon fat for 3-4 minutes.  Add wine, scraping the pan clean.  Add bacon back into mixture and reheat.  &lt;br /&gt;&lt;br /&gt;4.  As soon as the pasta is done, pour 1/4 C boiling water into the eggs to temper them.  Drain the pasta and quickly mix all ingredients together.  Stir well.  The heat from the pasta and bacon fat will finish cooking the eggs.  Serve immediately.&lt;br /&gt;&lt;br /&gt;I served this with fresh spinach. In each packet I added a beautiful leaf of swiss chard and a slice of orange for color.&lt;br /&gt;&lt;br /&gt;Marinade:&lt;br /&gt;1/4 C orange juice&lt;br /&gt;1 T lemon juice&lt;br /&gt;1 T dry vermouth&lt;br /&gt;2 T soy sauce&lt;br /&gt;1 T minced ginger&lt;br /&gt;pinch of sugar&lt;br /&gt;salt and pepper to taste&lt;br /&gt;&lt;br /&gt;ingredients:&lt;br /&gt;Olive oil&lt;br /&gt;4 skinless fillets of salmon (about 4 oz each)&lt;br /&gt;salt and pepper&lt;br /&gt;&lt;br /&gt;Preheat the oven to 350 degrees.&lt;br /&gt;&lt;br /&gt;In a small saucepan combine all marinade ingredients.  Simmer over medium heat until marinade is reduced by half.  Set aside.&lt;br /&gt;&lt;br /&gt;Cut 8 large pieces of parchment paper into squares large enough to cover each fish fillet and leave a 2-in border all around.  Lightly brush each square with oil.&lt;br /&gt;&lt;br /&gt;Put each salmon fillet in the center of the oiled square and drizzle with marinade. Season with salt and pepper.&lt;br /&gt;&lt;br /&gt;Place the remaining square on top and fold up the edges to form packets. Dinner tonight was great. And the only reason it was possible was because Douglas was watching the kids. The beef was cooked to perfection and just melted in our mouths.  I browned it in very hot oil and then took it out while it was still raw in the center.  You add it back in at the end and reheat it gently - Mmmmm good.&lt;br /&gt;&lt;br /&gt;I did make several mistakes. Next time I will use beef broth instead of bullion which made it too salty.  Also, I next time I will use more liquid.  I let it cook down too far and we didn't have enough "sauce," instead everything was coated in a nice glaze.  More liquid would have also cut down on the saltiness.  But overall, for a first time recipe - a success!&lt;br /&gt;&lt;br /&gt;Here is the recipe:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Filet of Beef Bourguignon&lt;/span&gt;_Ina Garten From &lt;span style="font-style:italic;"&gt;The Barefoot Contessa Cookbook&lt;/span&gt;&lt;br /&gt;1 3-pound filet of beef, trimmed_Kosher salt_Freshly ground black pepper_3 to 4 tablespoons good olive oil_1/4 pound bacon, diced_2 garlic cloves, minced_1 1/2 cups good dry red wine, such as Burgundy or Chianti_2 cups beef stock_1 tablespoon tomato paste_1 sprig fresh thyme_1/2 pound pearl onions, peeled_8 to 10 carrots, cut diagonally into 1-inch-thick slices_3 tablespoons unsalted butter at room temperature_2 tablespoons butter at room temperature_1/2 pound mushrooms, sliced 1/4-inch thick (domestic or wild)&lt;br /&gt;&lt;br /&gt;With a sharp knife, cut the filet crosswise into 1-inch thick slices. Salt and pepper the filets on both sides. In a large, heavy-bottomed pan on medium-high heat, saute the slices of beef in batches with 2 to 3 tablespoons oil* until browned on the outside and very rare on the inside, about 2 to 3 minutes on each side. Remove the filets from the pan and set aside on a platter.&lt;br /&gt;In the same pan, saute the bacon on medium-low heat for 5 minutes, until browned and crisp. Remove the bacon and set it aside. Drain all the fat, except 2 tablespoons, from the pan. Add the garlic and cook for 30 seconds.&lt;br /&gt;&lt;br /&gt;Deglaze the pan with the red wine and cook on high heat for 1 minute, scraping the bottom of the pan. Add the beef stock, tomato paste, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper. Bring to a boil and cook uncovered on medium-high heat for 10 minutes. Strain the sauce and return it to the pan. Add the onions and carrots and simmer uncovered for 20 to 30 minutes, until the sauce is reduced and the vegetables are cooked.&lt;br /&gt;&lt;br /&gt;With a fork mash 2 tablespoons of butter and flour into a paste and whisk it gently into the sauce. Simmer for 2 minutes to thicken.&lt;br /&gt;&lt;br /&gt;Meanwhile, saute the mushrooms separately in 1 tablespoon butter and 1 tablespoon oil for about 10 minutes, until browned and tender.&lt;br /&gt;&lt;br /&gt;Add the filet of beef slices, the mushrooms, and the bacon to the pan with the vegetables and the sauce. Cover and reheat gently for 5 to 10 minutes. Do not overcook. Season to taste and serve immediately.&lt;br /&gt;&lt;br /&gt;Note: This dish is excellent made in advance and refrigerated in the pan. I really respond to pictures of beautiful food, I start salivating and thinking, I can make that!  So I'm wondering if my menu is a little ambitious this week, we'll see.  The weather man is forecasting rain this week so I included a hearty stew for Sunday dinner and a delicious soup for later in the week.  I predict that my children will hate both! I had to know more.  Apparently, in Istanbul they have a delicious winter drink called &lt;a href="http://cafefernando.com/a-winter-drink-that-makes-your-boobs-grow-bigger"&gt;Boza.&lt;/a&gt;  It is a fermented drink made from bulgar served with a sprinkling of cinammon. This past week &lt;a href="http://www.livescience.com/health/080107-longevity-behaviors.html"&gt;a new medical study&lt;/a&gt; detailed 4 components, that combined, where shown to help people live 14 years longer.  Don't smoke, exercise, drink very moderately and - EAT FIVE A DAY! &lt;br /&gt;&lt;br /&gt;So, my goal each day is to at least offer fruits and veggies at every meal.  Its also part of our eat more local food plan.  It seems like such a simple change to make, and yet, because more prep work is involved, these foods often go uneaten.  If I can go out of my way to make a special trip to See's Candies for a Scotchmallow - I certainly can take extra minutes to cut up carrot sticks for lunches or steam broccoli for dinner. Her site, &lt;a href="http://www.thisweekfordinner.com"&gt;www.thisweekfordinner.com&lt;/a&gt; inspired me to renew my efforts at my food blog and to get things rolling again.  &lt;br /&gt;&lt;br /&gt;To start, here is what is for dinner at my house this week:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Saturday&lt;/span&gt; - Hunter's Chicken with fried polenta&lt;br /&gt;The sauce for this turned out really well because I used fresh rosemary from our garden.  The flavor and scent was nicely infused.  The chicken on the other hand was too tough.  It had been frozen for too long. Everyone makes several dozen of their favorite holiday cookie. Then we all get together and trade cookies.  You walk away with a whole variety of yummy cookies without having to do all the baking yourself.  &lt;br /&gt;&lt;br /&gt;My favorite holiday cookies are not only delicious, but they also evoke memories.  Due in part I'm sure to the idea that I only make them around the holidays.  A holiday favorite for me, taught to me by my mother-in-law, are Nut Tassies.  They're like minuture pecan pie bites.  Very southern, very yummy!  For my chocolate fix, there is nothing like a chocolate crinkle cookie - nice and chewy with a sprinkling of powdered sugar.&lt;br /&gt;&lt;br /&gt;The cookie that I always want to make, but can never seem to get quite right is the classic sugar cookie.  So I'm putting it out there - Does anyone have a favorite sugar cookie recipe that they swear by? I have been making a conscious effort to serve my family more vegetables and to try vegetables that we are less familiar with.  I am afraid that soon I will have a rebellion on my hands.&lt;br /&gt;&lt;br /&gt;Our standby favorite is still broccoli.  I love to have steamed in chicken broth.  It gives it great flavor without having to add butter and salt.&lt;br /&gt;&lt;br /&gt;My family will tolerate green beans.  I steam them as well in broth, or just serve them raw in salad - nice and crunchy.&lt;br /&gt;&lt;br /&gt;Last night we tried swiss chard sauteed in olive oil with a little garlic and salt.  Very nice!  The red color is very striking.  The trick is to not overcook it or it loses its nutrional value.&lt;br /&gt;&lt;br /&gt;Baby bok choy is another nice addition to our menu.  Chop it up and add to a spinach salad.  Saute with your eggs for breakfast, or add it to your top ramen.&lt;br /&gt;&lt;br /&gt;I came upon a very interesting website:  http://whfoods.org/foodstoc.php.  The world's healthiest foods site lists 100+ foods which should be a part of our diet in order to get our vitamins and minerals from food sources rather than pills. The foods are chosen because they are nutrionally dense, familiar, whole foods, affordable, and taste good,  They offer suggestions on how to prepare a variety of foods, the nutrional makeup and recommended amounts of each. The produce is shifting from the summer crops, such as the raspberries, to the autumn crops, such as the butternut squash.  I also found the pretty gourd at the market.&lt;br /&gt;&lt;br /&gt;Here is a delicious recipe for butternut squahs soup.  (I mix leftovers in the cheese sauce for macaroni and cheese - very sneaky way to get veggies in an otherwise nonnutritional lunch!)&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;&lt;br /&gt;2 lbs butternut squash, seeded, peeled, and chopped&lt;br /&gt;2 14 oz cans broth (vegetable or chicken)&lt;br /&gt;2-3 T butter&lt;br /&gt;1/2 C milk (to thin)&lt;br /&gt;salt and pepper to taste&lt;br /&gt;&lt;br /&gt;Optional spices:  1/2 t ground red pepper or 1/2 t nutmeg&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;&lt;br /&gt;1.  Slice squash is half lenthwise, scoop out seeds.  Chop into small pieces, cutting off rind.&lt;br /&gt;&lt;br /&gt;2.  Place the squash and broth in a large pot, bring to a boil for 20 minutes or until squash is soft.  Transfer squash to a blender, reserving liquid for thinning.  Puree veggies, adding broth until desired consistency is reached.  Stir in butter, milk and salt and pepper to taste.  &lt;br /&gt;&lt;br /&gt;3. It was a HUGE hit!  A great alternative to pumpkin pie (which I don't care for very much.)  This cheescake is light, with just the right hint of pumpkin flavor.&lt;br /&gt;&lt;br /&gt;Pumpkin Swirl Cheesecake&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;26 NABISCO Ginger Snaps, finely crushed&lt;br /&gt;1/2 C finely chopped pecans&lt;br /&gt;1/2 C butter, melted&lt;br /&gt;4 (8ounce) pkgs Philadelphia Lite Cream Cheese, softened&lt;br /&gt;1 C sugar, divided&lt;br /&gt;1 t vanilla&lt;br /&gt;4 eggs&lt;br /&gt;1 C canned pumpkin&lt;br /&gt;1 t ground cinnamon&lt;br /&gt;1/4 t gound nutmeg&lt;br /&gt;Dash of ground cloves&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;1.  Preheat oven to 325 degrees F.  Mix ginger snap crumbs, pecans and butter.  Press firmly into bottom and 1 inch up side of 9-inch springform pan.&lt;br /&gt;&lt;br /&gt;2.  Beat creamcheese, 3/4 cup of the sugar and the vanilla with elextric mixer until well blended.  Add eggs, on at a time, mixing on low speed after each addition just until blended.  Remove 1 1/2 cups of the batter; place in small bowl.  Stir remaining 1/4 cup sugar, the pumpkin and spices into remaining batter.  Spoon half of the pumpkin batter into crust; top with spoonfuls of half of the reserved plain batter.  Repeat layers.  Cut through batters with knife several times for marble effect.&lt;br /&gt;&lt;br /&gt;3.  Bake 55 min. or unti center is almost set.  Cool completely.  Refrigerate 4 hours or overnight. The baby sat in his car seat where he could hear the noise and see his brother.  Elias was strapped into his chair with play do.  And Addison was at the kitchen table doing homework.  In the meantime, I threw together a yummy vegetarian chili that I like.  Instead of the normal witching hour (you know, between 5 and 6 when everyone falls apart), we had a quiet hour.  Addison finished her homework and violin practice while dinner cooked!&lt;br /&gt;&lt;br /&gt;Now that is the success part.  The secret here is that I also kept them quiet with yesterday's cornbread, reheated in the microwave.  Elias had strawberries and yogurt.  And Addison made everyone chocolate milk.  So when it comes to actually eating the chili, I may be the only one who is hungry.  Douglas will eat it later when he gets home, but he will not eat the leftovers.  So, I got to make something I liked, kept the kids quiet and happy, but still did not achieve the goal of making ONE dish for everyone.  &lt;br /&gt;&lt;br /&gt;SIGH. Heat oil in Dutch oven, saute onion and pepper 3 mins.  Add next 5 ingredients, cook 1 min. Stir in barley and next 4 ingredients, bring to a boil. The more people there are to feed the harder it seems to get.  I need dinners that are easy, but they must be something Douglas, Addison and Elias will eat because I don't have time to make 3 separate meals!&lt;br /&gt;&lt;br /&gt;You wouldn't think that Douglas would be so picky - after all, beggars can't be choosers!  But I have to admit I dread his call when he is coming home from work.  "Hi honey, I'm on my way home.  Is there anything to eat?"  Yes, I reply, but I never give the details because I'm usually still coming up with them!  Then the question - "What is there?"  And somehow, I know that whatever I answer will determine exactly how long it will take him to actually get home.  If the answer is acceptable, he'll see me in 20 minutes.  If it is not, he has pressing errands to do before coming home.  Or, the worst scenario, is the silent pause and the, "I'm just going to pick something up on my way home."  Oh the horror!  Oh the pressure!  We can't have Brie appetizers and Pasta with shrimp and scallops every night!  Sometimes you just have to settle for homemade Mac n' Cheese.  And yes, Douglas - you must eat your vegetables too!&lt;br /&gt;&lt;br /&gt;I don't mean to be too hard on my better half, perhaps I'm just cracking under the "What's for dinner tonight" pressure. Freeze the sauce in single-eriving airtight containers for up to two months.&lt;br /&gt;&lt;br /&gt;3 T olive oil&lt;br /&gt;4 garlic cloves, minced&lt;br /&gt;2 onions, chopped&lt;br /&gt;2 small carrots, chopped&lt;br /&gt;2 yellow squash, halved lengthwise, cut into 1/2 inch pieces&lt;br /&gt;2 zuchinni, halved lengthwise, cut into 1/2 inch pieces&lt;br /&gt;Salt and pepper&lt;br /&gt;1 1/2 T dried rosemary, chopped&lt;br /&gt;1 T thyme&lt;br /&gt;4 twenty-eight ounce cans peeled, plum tomatoes&lt;br /&gt;&lt;br /&gt;1.  Saute garlic and onion in olive oil until soft - about 5 minutes.  Add carrots, squash, zucchini, salt and pepper to taste, thyme and rosemary.  Stirring occasionally, cook until veggies are soft, about 15 minutes.&lt;br /&gt;&lt;br /&gt;2.  Transfer half the mixture to a bowl, set aside.  Gently crush the tomatoes with hands, and add them with juice to the pot.  Simmer until thickens, about 1 1/2 hours. Participants track their own progress wih a simple points system, everyone puts ten bucks in a jackpot, and the one with the most points wins.  &lt;br /&gt;&lt;br /&gt;For me, the 10 bucks just guarantees that I stay focused, not that I win.  Certainly the challenge looks easy enough, until you break it down into real life events.&lt;br /&gt;&lt;br /&gt;The food portion of the challenge looks like this:&lt;br /&gt;&lt;br /&gt;1. Only eat sweets once a week.&lt;br /&gt;2.  Eat 3 servings of veggies a day and 2 of fruit.&lt;br /&gt;3.  Don't eat for 3 hours before bed.&lt;br /&gt;4.  No soda.&lt;br /&gt;5. 8 glasses of water a day.&lt;br /&gt;&lt;br /&gt;For me, it breaks down like this: &lt;br /&gt;1. Food is a basic supplement to my sweets habit.  &lt;br /&gt;2. Fruit is good - no problem.  Veggies, I'm currently getting 1, maybe 2 (if I'm lucky) a day.  &lt;br /&gt;3. I snack from the moment I wake to the moment I go to bed (and no, this is not just a pregnant lady thing, though it doesn't help.) &lt;br /&gt;4.  I don't like soda, so that's not a problem.  &lt;br /&gt;5.  The water won't be too hard, I always have a water bottle with me.&lt;br /&gt;&lt;br /&gt;So - what I'm going for in this challenge is not perfection but simply improvement. More veggies, less sugar.  More meals, fewer snacks. Elias sat on one side of me and Addison stood on the other.  Addison is old enough that she can help measure and add ingredients and use the mixer now.  And Elias just tries to copy everything we do, including scooping flour all over the counter.  But mostly the two of them just hover like little vultures waiting for the opportunity to eat a bit of dough or to clean off a spoon or a beater.  Elias especially has bird like characteristics - lately he has taken to asking for food by opening his mouth wide, bouncing up and down, and saying uh, uh, uh.&lt;br /&gt;&lt;br /&gt;There is something very satisfying to me about baking cookies.  The smells, the tastes and the actions themselves transport me back to my childhood.  My mother made the most wonderful cookies!  I loved coming home from school to see my mom in the kitchen, a bowl of cookie dough on the counter and warm cookies on a plate.  Mom would let us "sneak" at least one taste of the dough before shooing us out of the kitchen, cookies in hand.&lt;br /&gt;&lt;br /&gt;Lately however, I've lost my cookie baking mojo.  I can't seem to recreate the soft, chewy cookies that are like my mother's.  Perhaps it is the difference in climate, perhaps I no longer eat enough of the unfinished dough!  Most likely, I need to adjust the ingredients for living at sea level.  All I know is that I long for the cookies of my youth - a little taste of sweet heaven to transport me back to my childhood.&lt;br /&gt;&lt;br /&gt;My mom is such a wonderful cook and baker.  I love her food and the food that reminds me of her. This is delicious warm or cold, for dinner or for lunch.  I like it with crusty bread and a green salad or fruit.&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;2 T butter&lt;br /&gt;4 leeks, white part only, minced&lt;br /&gt;1 onion, peeled and minced&lt;br /&gt;1/2 lb potatoes, peeled and diced&lt;br /&gt;1 quart chicken stock or water&lt;br /&gt;Salt and pepper&lt;br /&gt;1 C whole milk&lt;br /&gt;Dill&lt;br /&gt;&lt;br /&gt;1.  Melt that butter and sauted the leeks and onion for 10 mins.  Add the potatoes, stock and bring to a boil.  simmer for 35 minutes.&lt;br /&gt;2.  Puree in a food processor.  Season with salt and pepper.  Whisk in sour cream or milk.&lt;br /&gt;3.  Refrigerate for 6 hours. Combine buttermilk, egg, and rind. Stir well with a whisk.  Add to flour mixture, stir just until moist.  Gently fold in blueberries.&lt;br /&gt;&lt;br /&gt;Spoon batter into 12 muffin cups coated with cooking spray.  Bake at 400 for 20 mins.  Remove immediately and cool.  &lt;br /&gt;&lt;br /&gt;Drizzle with glaze if desired.
