Lemon-Blueberry Muffins



2 C flour
1/2 C sugar
1 t baking poweder
1/2 t baking soda
1/2 t salt
1/4 t nutmeg
1/4 C butter
1 1/2 C buttermilk
1 large egg
1 T grated lemon rind
1 C blueberries
Cooking Spray

Glaze: (optional)
1 T fresh lemon juice
1/2 C powdered sugar

Preheat oven to 400 degrees.

Combine flour and next 5 ingredients in a medium bowl; cut in butter with a pastry knife. Combine buttermilk, egg, and rind. Stir well with a whisk. Add to flour mixture, stir just until moist. Gently fold in blueberries.

Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400 for 20 mins. Remove immediately and cool.

Drizzle with glaze if desired. (You can make these up to 2 days ahead and glaze them the morning of . . .)

I have always thought your "seven year old" was a brilliant eater. She eats all sorts of things mine won't eat! MaCall recalls one evening in our little terrace house in Norwich where she ate her brocoli and I actually cried, I was that overjoyed. Eloise used to be my eat anything child, but she has become picky with age. Perhaps it is an age thing? I remember as a teen ager suddenly thinking gravy didn't look so disgusting anymore.

Today I had instant oatmel, several cheddar crakers, and lavendar chamomile tea for breakfast. I need to try those muffins.
